The complete mixing of the oil-water two-phase medium forms an emulsion, which is divided into two systems: oil-in-water or water-in-oil. The new vacuum homogenizer emulsifier has at least two requirements to complete emulsification: one is the intense mechanical cutting and dispersion effect, which cuts and breaks the fluid medium of the water phase and the oil phase into small particles, and then when they are gathered and merged, they penetrate and mix with each other to form an emulsion. The second is a suitable emulsifier, which acts as a bridge between oil and water molecules, and stabilizes the oil-water mixed emulsion through its charge and intermolecular force.
